Taco Night With A Twist

Healthy Taco Cup Dinner


500 grams mince (Beef, Chicken, Pork, Quorn)

1 tin of sweet corn kernels

1 capsicum diced

1 onion diced

2 zucchinis chopped finely (good source of hidden veg)

2 carrots finely chopped

1 tin of diced tomatoes

2 heads of gem lettuce

Table spoon minced garlic

Seasoning – Salt, Pepper, Mixed Herbs & Chilli flakes if you want some heat. o


Have all veg diced and ready to add

Heat a medium/large size pan on medium heat

Add mince and break with a wooden spoon

Cook mince until browned

Add onions, garlic, capsicums, zucchini, corn (drained) & carrot Sautee veg until softened

Add tinned tomatoes and your chosen seasonings

Stir and leave to simmer for a couple of minutes

Prep Lettuce cups by separating leaves rinse in cold water and lay down to dry.

Remove mince from heat

Serving Suggestions

Place lettuce cups on plate in a bowl like position

Spoon mince mixture into the lettuce cups

Serve with your choice of: Sour cream, cheese, jalapenos Enjoy
