Muffin Recipe

Protein 'Muffins'
Deliciously easy muffins that you can create with the help of your children.

Serves: 12

Prep & cook time : 10 - 15 minutes


INGREDIENTS

  • 350ml Egg whites
  • 2 whole eggs (yolk is used for binding)
  • 1/2 red capsicum / finely diced
  • 1/2 yellow capsicum / finely diced
  • 1 zucchini / grated
  • 1 small red onion finely chopped
  • 1/2 cup of sweet corn (tinned)
  • 50 grams of light cheese
  • canola oil spray
  • 150 grams of chopped finely diced ham

 
you can get creative with your veges add anything and everything it will all taste delicious.
If you are making this a vegetarian friendly meal leave out the ham and add extra veg.

Seasonings:
A pinch of; salt and pepper, half a teaspoon of paprika, if you have fresh herbs on hand finely chop them and add them in.

Method:
1.  Pre-heat oven to 180 degrees - place egg whites, 2 whole eggs (cracked) as well as your seaonings into a medium sized mixing bowl using a whisk or a fork blend together until whole eggs are beaten. Add all chopped ingredients into the mixing bowl EXCEPT from the cheese.
2.  Lightly spray a 12 tin muffin tray with your canola oil spray. Spoon mixture evenly into the muffin tray.Sprinkle cheese onto each muffin,  Place tray in your pre-heated oven for 12 - 15 minutes. Bake until egg has set. Serve warm.
These easy creations can be baked ahead kept in the fridge for 5 days or popped into the freezer if you have made in bulk. Simply heat up in the microwave to enjoy.
They are high in protein. low in carbs and full of goodness!!!
